Coconut and buckwheat flour pancakes

Who says pancakes can't be healthy! This recipe is gluten free and packed full of goodness. They are a family favourite in my household and are always quickly devoured, almost always with requests for second rounds! I have only recently started adding coconut flour to the mix, boosting its protein content and adding a slightly richer, coconut flavour.  Buckwheat flour is a great source of magnesium, that nutritional all-rounder that can help lower blood pressure, treat PMS, reduce muscular cramps, prevent osteoporosis, and relieve anxiety. Clearly we all could do with a little extra in our diets!

 This is such an easy, nourishing breakfast or snack. I often keep a mix in the fridge so I can cook up a really quick batch in the morning before school with out feeling too pressed for time.

 

Ingredients

1 cup buckwheat flour

1 tlbsp coconut flour

1 egg

2 cups milk - soy/almond/rice

1 tlbsp xylitol

1 tsp aluminium free baking powder

Butter/virgin coconut oil- for frying

To Serve

Handful of blueberries and strawberries

1 tlbsp yoghurt. I have been using the delicious Five AM honey and cinnamon, it is so rich and creamy, you only need a little.

Method

Combine buckwheat and coconut flour, xylitol, egg and milk, stirring well in a large mixing bowl.

The mixture should have a smooth but quite thick, cake like consistency. If it is too gluggy just add a little more milk.

Heat fry pan and add a dab of butter/virgin coconut oil. Make sure you pan is quite hot before spooning 2 - 3 tlbsp of your pancake mixture.

Once small bubbles have formed through out, flip!

Cook for another minute, and then serve topped with blueberries, strawberries and yoghurt.

Variations

You can embrace the whole 'tropical', coconut flavour and add desiccated coconut and serve with sliced banana.

To up your fruit content, grate an apple into the mix. This gives extra sweetness and tastes delicious.

Add in chia and hemp seeds to your mix. Once served, sprinkle 1 - 2 tlbsp of L.S.A. (ground sunflower seeds, linseeds and almond meal) to your fruit and yoghurt combo abndboost the protein and essential fatty acid levels.
