Dani valent's GRANOLA BARS

From one of My Green Lunch Box's favourite friends, " In The Mix: Great Thermomix Recipes", writer the one and only Dani Valent. My Green Lunch Box has added traditional methods for those without a Thermomix.

"Our school became nut-free recently so I have been experimenting with seeds and dried fruits in my baking. This is my favourite version of the granola bars which became a lunch box and after-school staple for my family. Of course, I have been known to have a square or two with a cup of tea as well!

It makes a difference to let the sugar and butter caramelise at the start of the process, adding a slight nutiness to the taste but, of course, keep the slice allergy friendly. The chia gives the bars a lovely slippery texture."

95 grams butter, roughly chopped
80 grams honey
90 grams brown sugar
80 grams dates (you can try substituting half the dates with dried figs)
200 grams oats
25 grams chia seeds
pinch cinnamon
pinch salt


Preheat oven to 140 degrees

If you have a thermomix, place the butter, honey and brown sugar in the TM bowl and melt for 6 minutes/Varoma/speed 2 to form a light, sticky (delicious) caramel. Otherwise melt and gently stir over a low heat until the caramel forms.

If you have a thermomix add the dates and chop for 4 seconds/speed 5. If not give them a quick whiz in your food processor , then add the caramel.

Add the oats, poppy seeds, chia, cinnamon and salt.

Mix for 10 seconds/speed 3 or mix in food processor for 20 seconds.

Line an oven tray about 20cm by 25cm with baking paper and press the mixture into it. It's quite sticky, so you can press it more or less flat with another sheet of baking paper. Otherwise, a spatula will do the job.

Bake for 20 minutes or until golden brown. the slice will be soft as it cools. Slice into squares and store in an airtight container.
